Today, it extends over 12 hectares, all of which are farmed organically and biodynamically, in keeping with this monastic heritage. The absence of chemicals in the soil for 16 years and the use of biodynamic practices allow the terroirs to express themselves fully in the wines of Les Bachelards. We work in viticulture <strong>biological<\/strong>certified by Alpes Contr\u00f4les FR-BIO-15, and in <strong>biodynamics<\/strong>validated by Demeter and Biodyvin. Our vines are grown at high density, with 10,000 vines per hectare, a specificity that favours the quality and concentration of the berries. The old vines, resulting from a massal selection, are meticulously cared for. We use innovative practices such as agroforestry and plant cover to enrich biodiversity and maintain a sustainable balance in the biotope of our vineyards.<\/p>\n<p>Harvesting is done by hand, with particular care taken to preserve the integrity of the bunches. The fruit is sorted at optimum ripeness and carefully placed in 16 kg crates to avoid any spoilage. Our yields are deliberately limited, to around 30 hectolitres per hectare, to ensure an authentic, concentrated expression of the terroir.<\/p>\n<h3>VINIFICATION AND AGEING :<\/h3>\n<p>Vinification takes place by gravity, without any sudden mechanical intervention, and begins with careful de-stemming. Fermentation is carried out with <strong>indigenous yeasts<\/strong> only, respecting the identity of the grape and the terroir. Unlike other approaches, we do not use carbonic maceration, semi-carbonic maceration or thermovinification.<\/p>\n<p>After a 28-day maceration, the wine is matured for 18 months in barrels that have already been used twice, as well as in terracotta amphorae. This process harmonises freshness and depth, sublimating the wine's intrinsic characteristics.<\/p>\n<h3>TASTING :<\/h3>\n<p>This <strong>Moulin-\u00e0-Vent 2022<\/strong> is distinguished by its natural class and controlled power. The nose reveals a complex palette of aromas: intense notes of black pepper and liquorice, subtly complemented by discreet but elegant woody touches.<\/p>\n<p>On the palate, it's a revelation: a full, generous texture with velvety tannins of remarkable finesse. The finish, precise and pure, leaves a lasting impression, firmly affirming its unique character.
