The Saint-Amour 2021 from Château des Bachelards is produced from south-facing, mid-slope parcels. The terroir is decomposed black granite with veins of loess and clay. The soil is deep, giving the wine surprisingly dense tannins and great uprightness. This is a Saint-Amour built to age, but already ready to drink young.

VITICULTURE: Organic certified by Alpes Contrôles FR-BIO-15 and biodynamic certified by Demeter and Biodyvin. High vine density (10,00 vines/hectare), very old Gamay vines under massal selection. Agroforestry and plant cover in the vineyards to balance the biotope and promote biodiversity. Hand-picked fruit at optimum ripeness in 16kg boxes. Very low yields of around 30 hl/ha.
VINIFICATION AND AGEING : Harvested by gravity, de-stemmed, vinified in crude concrete vats, macerated for 28 days, aged for 18 months in foudre and demi-muids to preserve its freshness and reinforce its substance. Native yeasts only, no carbonic or semi-carbonic maceration or thermovinification.
TASTING : This Saint-Amour is characterised by its elegance. A brilliant garnet-red colour, the nose is a bouquet of subtle flowers combining orange and violet. On the palate, the attack is greedy and silky, enhanced by astonishing tension and great persistence. The finish is dazzlingly pure, fresh and graceful. This wine is unique, it belongs here.
FOOD AND WINE PAIRING : Château des Bachelards Saint-Amour is traditionally the wine of lovers, but it goes far beyond this to become the wine of conviviality. It loves to be served with roast chicken or guinea fowl. More generally, it is also the wine that will enhance white meats and fine sauces. It goes well with chard, pumpkin or potato gratin.
The Château des Bachelards vineyard was created by the Benedictine monks of Cluny around 1100. Today, it extends over 12 hectares, all of which are farmed organically and biodynamically, in keeping with this monastic heritage. The absence of chemicals in the soil since 2007 and the use of biodynamic practices allow the terroirs to express themselves fully in the wines of Les Bachelards. The very old Gamay vines, the indigenous grape variety and the only red grape variety grown at Château des Bachelards, thrive wonderfully in our acidic, more or less weathered granite soils.
